Lay-bys, side of the road on a decent straight bit, flat verge, there's
usually somewhere suitable every few miles.

That's probably because the places you mention are not as widespread you
seem to imagine.

The side of the road, in a suitable place such that following traffic
can get past safely. Often it can be done without actually stopping.
There are even recognised signals that you can use to signal your
intention to move over and slow down or stop.

Somehow, I suspect you know all that already.

I did have a (small) motorcyclist pull over to let me pass recently. I
was happy to wait a mile for a straight bit a road, but at least he was aware.

OTOH a large motorcyclist who was doing < 30mph on the twisty bits would
still accelerate briskly to 50mph as soon as there was a straight section,
when I could otherwise have easily overtaken him.

(It is NSL unclassified road with a dodgy surface).

I did pull over twice on the steeper, slower bits for towing.
